Yes yes yes, peaches! My obsession with peaches continues with today’s recipe: peaches and overnight night oats! Two of my favorite thing colliding! As a mom, overnight oats can be a lifesaver. It’s a quick and easy breakfast to make and it is so so so healthy. It literally takes 5 mins to make this delicious peach overnight oats and you can eat it cold or hot. When you eat it hot, it’s like eating a peach cobbler – yummmm!
I usually love making this on a Sunday and if I don’t eat it on Monday I can eat it on a Tuesday or Wednesday. Overnight oats usually last 2-3 days and that’s why I love them so much. As a mom you’re so busy you don’t have time to eat so if I’m busy and I need to eat a fast breakfast or snack, this is definitely my go-to. It’s healthy and easy to make.
I usually prep all my overnight oats in these cute little mason jars and leave them in the fridge for my family to eat. This overnight oat was inspired by our grilled peach salad. - Old-fashioned oats
- Almond milk
- Honey
- Chia seeds
- Fresh basil
- Fresh mint
- Peaches
Peach Overnight Oats
Equipment
- Mason jars
Ingredients
- 1/4 cup chopped peaches
- 1/2 cup old-fashioned oats
- 1 cup almond milk
- 2 teaspoon honey
- 2 chopped fresh basil
- 2 chopped fresh mint
- 1 tbsp chia seeds
Instructions
- Wash and cut the peaches in half and take out the pits.
- Dice the fresh peaches.
- Add all the ingredients into the jar and mix well.
- Put the lid on and shake well
- Refrigerate overnight
- Enjoy cold or warm (if warm, microwave for 30 seconds)
