I sometimes feel like the best part about thanksgiving is the Turkey congee you get to make after eating the turkey. Doug always laughs when he sees me telling him “Hey I think that’s enough turkey for you…and starts sneaking some meat to the kitchen. Yes, Thanksgiving is about being grateful for your family…and I would be more thankful if they can stop eating all my turkey so I can save it for the best leftover turkey congee. Ok…you get my point. Turkey congee the day after thanksgiving is so satisfying…it’s always so cold and the first thing you wake up to the smell of the porridge is just delicious.

As you know I’m Chinese and my parents used to own a Chinese restaurant and cafe so we’re all about comfort food. Congee to us is comfort food. Whenever you have an upset stomach, a cold, not feeling well my parents would always make me congee to help me feel better. So, this goes back to years and years of making congee. Turkey congee is a perfect food if you have indigestion, weak immunity, and it is tasty as well. I’m going to share with you my father-in-law’s secret recipe for this silky and best congee recipe. I used to make it with just jasmine rice but now I make it with Japanese short grain and it absolutely changed my congee game.

If you always just toss the turkey carcass, I promise you if you try this recipe, you’ll forever change your thanksgiving turkey plans. I know it might seem intimidating to make congee sometimes because a lot of time it burns and you have to watch the stove but it makes it easier just use your instant pot so you don’t have to do anything…turkey congee instant pot is awesome, so why not right? The best part about the turkey congee is NOTHING goes to waste…. we always try to use everything so we don’t waste any food…plus it’s delicious.

Ingredients

  • 1 Turkey carcass
  • 1 Cup Jasmine long grain rice
  • 1 cup Japanese short-grain rice
  • 16 cups of water
  • Ginger
  • Green onions
  • Cilantro
  • White pepper
  • Salt to taste

Instruction

  • In a large stockpot, add in the turkey carcass and turkey juice after you cut up the turkey.
  • Pour in the 16 cups of water and rice and bring it to a boil.
  • Let the congee boil for about 15 mins and change it to simmer for about 3 hours. Remember to not stir often; this will somehow cause the rice to stick to the bottom.
  • Let the rice and turkey integrate and bring out all the flavors of the turkey. If you don’t have to wait around, just add everything into your instant pot and let it cook for 30 mins and voila…you’re done!!!
  • Now carefully take out all the bones and carcass. You can use tongs or chopsticks. Give the turkey congee a couple of stirs and add salt to your taste. If the consistency is too thick you can always add more water and let it simmer more.
  • Now add in chopped green onions and cilantro and some white pepper to your liking.
  • Enjoy Friends!
