Delicious Savory Oatmeal with Egg and Avocado

Your whole day relies on what you eat in your breakfast. Having a delicious yet healthy breakfast can make your mornings energetic yet fun. If you want to start your morning right then you need to try this savory oatmeal with egg. Oatmeal can helps you stay healthy, besides being delicious they have countless benefits (including good heart health, helps in losing weight, lowers down blood pressure, lowers cholesterol, improves digestion, controls blood sugar, etc.) I’ve been eating oatmeal in a savory way ever since I was 12 years old. I just remember my mom telling me to drink soup in the morning and then make me this bland oatmeal so I asked her hey mom why don’t we just cook the soup with oatmeal…. kill two birds with one stone. Tada!! But of course, through the years I’ve made tons of different combinations of this now this simple savory oatmeal with egg is my number one hearty go-to breakfast I make for myself and my family.

Savory oatmeal with eggs is definitely in my weekly breakfast rotation. My kids love savory oatmeal. I’ve been making this for them ever since they can eat.

Ingredients to make this Recipe

  • Rolled Oats: I prefer using rolled oats because it’s a little quicker than steel-cut oats. 
  • Chicken Broth or Bone Broth: I make bone broth every Sunday so I use bone broth or store-bought chicken broth. I prefer to use trader joe’s organic chicken broth.
  • Avocado: Avocado is incredibly nutritious! I think we all know that…but just in case you don’t here’s the link.
  • Egg: I like putting a poached egg on the top but my kids like fried eggs. Imagine cutting the egg open and the yolk just rushing out onto your oatmeal.
  • Olive oil: So rich in healthy fats…we like to drizzle a little to top off the oatmeal.
  • Chia Seeds: Whenever I make oatmeal or smoothies, I always mix in some chia seeds. They have several benefits, for example, they are high in antioxidants, have iron, fiber, calcium, and HDL (good) cholesterol.
  • Flaxseeds: Another great seed we love to put into our savory oatmeal with an eggs bowl. It is great for digestion and helps with constipation.

Notes: If you are a vegetarian, and don’t want to make savory oatmeal with chicken, let’s make a plant base oatmeal bowl, by replacing the chicken broth with just vegetable broth.

Delicious Savory Oatmeal with Egg and Avocado

Equipment

  • Mixing bowl
  • Nonstick pot

Ingredients
  

  • 1/2 cup rolled old fashioned oats
  • 1 /12 cup chicken broth/bone broth
  • 1 egg
  • 1/2 sliced avocado
  • 1/2 tbsp chia seed
  • 1/2 tbsp flaxseed
  • 1/2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions
 

Oatmeal

  • Add the chicken broth to a small bowl, and bring it to a boil. 
  • Reduce the heat to low and add in the oats. 
  • Stir the oats and broth together and then put a lid on it and let it cook for about 5 mins.
  • Now add in the chia seeds and flaxseeds. 
  • Stir occasionally until the oats are soft and smooth. Now remove from the heat with the cover on and let it sit for 3 mins.

Egg

  • For savory oatmeal with eggs, you should know how to make the eggs the right way.
  • Add in about 2 cups of water in a small pot, and bring the water to a boil. When the water boils, lower the heat so the water is just bubbling and not boiling. Add some salt to the water.
  • Use a spoon or a chopstick, start stirring the water in a circular motion kind of like creating a tornado.
  • Now add in the egg
  • Cook the egg for about 2 1/2 min to 3 mins.
  • Remove it and serve it over the oatmeal.

Avocado

  • Sliced 1/2 avocado and serve it over the oatmeal
  • Drizzle some olive oil on top
  • Salt and pepper to taste
